Teaching Method Presentation
The European School for Sommelier has a distinctive course structure and its own teaching system and method developed by Gabriele Bacciottini in over 10 years of experience as a sommelier, teacher and organizer of events and gourmet competitions. Gabriele Bacciottini is assisted by a technical team composed of teachers, agronomists and professional catering workers. Our teaching method is UNI EN ISO certified.
The teaching method to become a sommelier is based on a rigorous structure of the basic training course. For those who want to extend their knowledge in:
- wine service
- cellar and wine list management
- teaching
A subsequent courses and masters are available.
The teaching method is supported by educational notes produced by the school teachers and by the book "The Sommelier" (ed. Plan - Italy) written by Gabriel Bacciottini togheter with the cooperation of Fabrizio Beria.
Our motto "Teaching the food and wine art in a simple way " can be seen already reading the first lines of educational book and seeing our tasting forms. As you can see also in the lesson table, we analysed all the topics of each lesson, because we want our language is prompt and unique all over the world.
In addition to the theoretical phase each lesson is splitted in practical applications:
- the analytical and professional tasting of wines proposed during each meeting (minimum of three bottles)
- the compilation and discussion of the dedicated tasting form and/or “star pairing” diagram ( this practice is performed individually and with the teacher)
- the practice of wine serving: starting from bottle uncorking until the proper service in the cup up to cleaning of workspace.
The practical part of our lessons will be completed by means of educational tours and lessons held directly in the winemaker companies, where, consistent with the period and the host organization, classroom sessions are held about viticulture, winemaking, sparkling wine preeparation and distillation.
Our commitment is oriented to the true knowledge and , for this reason, we fairly assess the value for each course and level, avoiding to buy, as they do already in too many schools, useless accessories such as briefcases, glasses or whatever is not directly applicable to the pure teaching.
